This is teff.
Teff is a species of lovegrass native to Ethiopia and Eritrea. In addition to being one of the world’s most nutritious grains, it’s also one of the most sustainable. It takes less time, less water and less space to grow than any other grain. When the wind hits the crop, some of the fragile seeds fall to the ground, planting themselves. This means we get to reap what we sow – twice.
Here's why it's so good for you.
What it lacks in size, it makes up for with unusually high levels of magnesium, zinc and potassium – all vital for brain, heart, kidney and muscle health. Like quinoa, it contains all of the nine essential amino acids that acts as building blocks for protein. Three of them are BCAAs, which are essential to helping you build muscle, decrease muscle fatigue and alleviate soreness after working out. With 12g of protein and 7g of fibre per cup, it's superior when it comes to muscle building, weight loss and fibre content that helps keep you satiated for longer. Oh, and it's gluten free.
